Mississippi is a "right to work" state, meaning that employees cannot be forced to pay union dues and join a union if a union exists at their work place.  Nevertheless, there are many unions in MS: catfish workers in the Delta, state employees, communication workers, timber workers, firefighters, postal workers, Teamsters, and so on.  If your bigger question is why aren't university employees unionized, well, that's a good question.
